Biopolymer(Levan)
The unusual polysaccharide, levan, is produced by the fermentation of sucrose. Levan is strongly adhesive and has a very low intrinsic viscosity. Unlike most polysaccharides, it does not swell in water. Water "soluble" and film-forming levan has potential applications in hair and skin care products.
This spherical-shaped polyfructose has previously only been available in small quantities. Cathay can now produce levan in multi-ton batches.
